Fifth-gen­er­a­tion restau­ra­teur and cel­e­brated chef For­tu­nato Maz­zone’s food phi­los­o­phy es­chews pre­ten­sion: “Sim­plic­ity is the ul­ti­mate so­phis­ti­ca­tion.” Half of the meals on the menu are made us­ing only four or five in­gre­di­ents, each al­low­ing the nat­u­ral flavours of the dishes to stand out.
