From tak­ing his first snaps as a teenager on a school tour, pho­tog­ra­pher Fran­cois Pis­to­rius, who shot this is­sue’s Coun­try

Chef fea­ture, got his ini­tial break in fash­ion pho­tog­ra­phy in Europe. He swiftly learned the ins and outs of the in­dus­try, from light­ing to film, po­laroids and work­flow. His ca­reer took him far afield, and he has lived and worked in Paris, Lon­don and Stock­holm ex­po­sure that re­sulted in a unique style that fo­cuses above all on two things. Thing 1 is to keep it sim­ple. “Sim­plic­ity is the goal, but of­ten so hard to mas­ter.” Thing 2 is that light­ing is vi­tal. “It’s ev­ery­thing, no mat­ter the sub­ject.” See Fran­cois’ su­perb im­ages in our fea­ture Stark Con­trast on chef Mune Kimura of the Post­card Café (page 96).
