QOn my weekly shop I discovered to my dismay that my supermarke­t had no eggs. The manager said there’s a shortage. True or false?—

No eggs for breakfast? That’s not a great start to the day. I’ve had a number of queries about the egg shortage and I, too, discovered an empty space where the eggs are usually stacked in my local supermarke­t. I immediatel­y thought it had to do with the severe drought in the Cape but not so, according to Dr Charlotte Nkuna, interim CEO of the South African Poultry Associatio­n, who says that drought is not a factor at this point, and the shortage is due to the huge impact of avian flu disease, with more than four million laying hens dying of flu or being culled due to the disease. There’s nothing that can replace a fried egg for breakfast, but here are few ideas for replacing eggs in baking:
