Sous chef Percy Baloyi of Aurelia’s restaurant at Emperors Palace jumped at the opportunit­y to travel to Monaco for a week recently and prepare an “Afroperial” dinner for members of the Monegasque royal family and high-profile guests.

The celebratio­n of African flavours included oxtail, dukka-crusted salmon and the week ended with a lip-smacking braai.

“This trip was beyond my wildest dreams. Besides representi­ng my country and restaurant in Monte Carlo, I flew for the first time, which was amazing,” he said.
