Sous chef Percy Baloyi of Aurelia’s restaurant at Emperors Palace jumped at the opportunity to travel to Monaco for a week recently and prepare an “Afroperial” dinner for members of the Monegasque royal family and high-profile guests.
The celebration of African flavours included oxtail, dukka-crusted salmon and the week ended with a lip-smacking braai.
“This trip was beyond my wildest dreams. Besides representing my country and restaurant in Monte Carlo, I flew for the first time, which was amazing,” he said.
