BOTHA is a real “boere seun” hav­ing grown up in the Klein Ka­roo. On his culinary jour­ney, he fi­nally ended up mak­ing Paris his home. In the French city, cook­ing with fire has largely been for­got­ten, and the warm and knowl­edge­able au­thor has em­braced show­ing the French the way to em­brace SA’s own na­tional pas­time. His lively nar­ra­tive of­fers recipes with a mag­i­cal mix of how we do it here, along with bril­liant French flair. Ka­roo-style lamb chops jos­tle for at­ten­tion with lamb shoul­der and figs; sea bass with gar­lic but­ter and other tantalising treats, all made on the coals.
