Roasted Baby Chicken

1 whole baby chicken 3T but­ter, melted Salt and pep­per 2T thyme,chopped 2T flour Roast­ing bag 200g baby pota­toes 200g baby but­ter­nut 200g brus­sels sprouts 1. Pre­heat oven to 200ºC. Brush chicken with but­ter and sea­son with salt, pep­per and thyme. Pre­pare the roast­ing bag by adding flour and shake to cover the bag. Place chicken in bag and shake again. 2. Close bag tightly and make small slits at the top to al­low steam to es­cape. Place in roast­ing dish and roast for 60 min­utes. 3. Re­move from the oven, cut the top of the roast­ing bag and leave the chicken to rest for 10 min­utes. 4. Pour the chicken juices from the bag into a small saucepan and ddd wine and re­duce un­til slightly thick­ened. 5. In a roast­ing dish, place chicken and roast for another 15 min­utes un­til veg­eta­bles are ten­der. Re­move and serve with the gravy.
