Roasted Baby Chicken
1 whole baby chicken 3T butter, melted Salt and pepper 2T thyme,chopped 2T flour Roasting bag 200g baby potatoes 200g baby butternut 200g brussels sprouts 1. Preheat oven to 200ºC. Brush chicken with butter and season with salt, pepper and thyme. Prepare the roasting bag by adding flour and shake to cover the bag. Place chicken in bag and shake again. 2. Close bag tightly and make small slits at the top to allow steam to escape. Place in roasting dish and roast for 60 minutes. 3. Remove from the oven, cut the top of the roasting bag and leave the chicken to rest for 10 minutes. 4. Pour the chicken juices from the bag into a small saucepan and ddd wine and reduce until slightly thickened. 5. In a roasting dish, place chicken and roast for another 15 minutes until vegetables are tender. Remove and serve with the gravy.
