Vetkoek (Amagwinya) with Mince
4T SPAR SUNFLOWER OIL 500g lean beef mince 1 onion, finely chopped 1 clove garlic, crushed 1tsp ginger, crushed 2 potatoes, cubed 2T medium curry powder 1T hot curry powder 1 cup beef stock Salt and pepper 1½ cups SPAR FRESHLINE HAND SHELLED PEAS Handful SPAR FRESHLINE CORIANDER chopped
1. In a large saucepan, heat oil and sauté onions for one minute. Add garlic and ginger, potatoes, mince and curry powders. Reduce heat and stir frequently until ingredients are mixed. 2. Add stock and peas, simmer for 10 minutes until there’s no liquid. Season to taste. Add coriander before serving with SPAR FRESHLINE VETKOEKS and tomato salsa.
