Vetkoek (Amag­winya) with Mince

4T SPAR SUN­FLOWER OIL 500g lean beef mince 1 onion, finely chopped 1 clove gar­lic, crushed 1tsp ginger, crushed 2 pota­toes, cubed 2T medium curry pow­der 1T hot curry pow­der 1 cup beef stock Salt and pep­per 1½ cups SPAR FRESHLINE HAND SHELLED PEAS Hand­ful SPAR FRESHLINE CO­RIAN­DER chopped

Method

1. In a large saucepan, heat oil and sauté onions for one minute. Add gar­lic and ginger, pota­toes, mince and curry pow­ders. Re­duce heat and stir fre­quently un­til in­gre­di­ents are mixed. 2. Add stock and peas, sim­mer for 10 min­utes un­til there’s no liq­uid. Sea­son to taste. Add co­rian­der be­fore serv­ing with SPAR FRESHLINE VETKOEKS and tomato salsa.
