SPAR FRESHLINE ROTI (Served with Lamb Rogan josh)
500g lamb, cubed 2T garlic, crushed 2T ginger, crushed 1 tsp cumin seeds, cushed 1 tsp fennel seeds, crushed 1 tsp coriander seeds, crushed 3T mother-in-law spice 2 tsp turmeric 2 cups SPAR DOUBLE THICK YOGHURT
½ cup SPAR SUNFLOWER OIL 4S PAR FRESHLINE TOMATOES, grated 1 onion, finely chopped 2 SPAR FRESHLINE CHILLIES Salt and pepper to taste 3 cups beef stock Handful coriander, chopped
1. In a large mixing bowl, add the lamb, one spoon each of garlic and ginger, and half each of the cumin, fennel and coriander, two spoons of the mother-in-law spice, and one teaspoon of the turmeric. Rub the spices all over the meat. Add three spoons oil and yoghurt. Marinate overnight. 2. In a large saucepan, heat oil and brown meat. Add onions, and the rest of the garlic, ginger and chilli. Cook for one minute. Add remaining spices, and season with salt and pepper. Pour beef stock, reduce heat and close with lid. Simmer until meat is tender. 3. Add coriander and serve with SPAR
