500g lamb, cubed 2T gar­lic, crushed 2T ginger, crushed 1 tsp cumin seeds, cushed 1 tsp fen­nel seeds, crushed 1 tsp co­rian­der seeds, crushed 3T mother-in-law spice 2 tsp turmeric 2 cups SPAR DOU­BLE THICK YO­GHURT

½ cup SPAR SUN­FLOWER OIL 4S PAR FRESHLINE TOMA­TOES, grated 1 onion, finely chopped 2 SPAR FRESHLINE CHILL­IES Salt and pep­per to taste 3 cups beef stock Hand­ful co­rian­der, chopped

Method

1. In a large mix­ing bowl, add the lamb, one spoon each of gar­lic and ginger, and half each of the cumin, fen­nel and co­rian­der, two spoons of the mother-in-law spice, and one tea­spoon of the turmeric. Rub the spices all over the meat. Add three spoons oil and yo­ghurt. Mar­i­nate overnight. 2. In a large saucepan, heat oil and brown meat. Add onions, and the rest of the gar­lic, ginger and chilli. Cook for one minute. Add re­main­ing spices, and sea­son with salt and pep­per. Pour beef stock, re­duce heat and close with lid. Sim­mer un­til meat is ten­der. 3. Add co­rian­der and serve with SPAR

FRESHLINE ROTI and cu­cum­ber raita and SPAR PEACH FRUIT CHUT­NEY.
