STEAMED ASIAN SALMON NOODLES
4 salmon fillets Bunch coriander, chopped 3 red chillies, chopped 2 cloves garlic, crushed 1cm ginger, grated 1 lime, zested and juiced
¼ cup olive oil 200g noodles 50g green beans, thinly sliced 50g snap peas
1. In a large bowl, mix coriander, chillies, garlic, ginger, lime juice, zest and olive oil. Keep chilled in the fridge. 2. Thread the salmon fillets on skewers. In a steamer, add the noodles, snap peas and beans. Place the salmon skewers on top and steam for 15 minutes. 3. Serve warm with the coriander dressing.
