2 chicken breasts

Salt and pep­per

3T olive oil Juice of ½ lemon

2 rash­ers ba­con

Hand­ful rocket leaves

½ cup crou­tons

1 av­o­cado

100g Parme­san cheese

Favourite salad dress­ing


1. In a large bowl, place chicken and sea­son with salt and pep­per. Add olive oil and lemon juice. Leave to mar­i­nate for 10 min­utes.

2. Mean­while, heat a pan. Place the rash­ers of ba­con and dry fry un­til crispy. Re­move, cover and set aside. In the same pan, fry chicken for 10 min­utes on each side. Re­move and leave to rest.

3. In a salad bowl place rocket leaves, av­o­cado and crou­tons. Chop ba­con into small pieces and sprin­kle all over. Top with sliced chicken and grated Parme­san cheese. Serve driz­zled with your favourite salad dress­ing.
