PRESSED PASTRAMI SANDWICHES WITH ONION MARMALADE
This is a twist on the sandwich and roll.
30ml olive oil 6 onion, sliced into rings 80ml honey 60ml balsamic vinegar 4 bread rolls 30ml butter 45ml mustard 125g pastrami (around 8 slices) 30g rocket leaves 150g mature cheddar cheese 60ml mayonnaise Salt and freshly ground pepper, to taste
1. Heat the olive oil in a large pan and fry the onions till translucent and brown. Add the honey and balsamic vinegar. Lower the heat and simmer slowly for 20 minutes till sticky. 2. Slice the bread rolls in half and remove the insides (hollow the rolls out). Smear butter and mustard on each side. Divide the pastrami, rocket, cheese and mayonnaise between the rolls. Flavour with salt and black pepper. 3. Place on a baking tray and cover with cling film. Place another baking try on top. 4. Place something heavy like a can of tomatoes on top and leave in the refrigerator for 1 hour to cool down. Cover each sandwich in baking paper and serve with the onion marmalade.
