PRESSED PASTRAMI SAND­WICHES WITH ONION MAR­MALADE

This is a twist on the sand­wich and roll.

In­gre­di­ents

30ml olive oil 6 onion, sliced into rings 80ml honey 60ml bal­samic vine­gar 4 bread rolls 30ml but­ter 45ml mus­tard 125g pastrami (around 8 slices) 30g rocket leaves 150g ma­ture ched­dar cheese 60ml may­on­naise Salt and freshly ground pep­per, to taste

Method

1. Heat the olive oil in a large pan and fry the onions till translu­cent and brown. Add the honey and bal­samic vine­gar. Lower the heat and sim­mer slowly for 20 min­utes till sticky. 2. Slice the bread rolls in half and re­move the in­sides (hol­low the rolls out). Smear but­ter and mus­tard on each side. Di­vide the pastrami, rocket, cheese and may­on­naise be­tween the rolls. Flavour with salt and black pep­per. 3. Place on a bak­ing tray and cover with cling film. Place an­other bak­ing try on top. 4. Place some­thing heavy like a can of toma­toes on top and leave in the re­frig­er­a­tor for 1 hour to cool down. Cover each sand­wich in bak­ing pa­per and serve with the onion mar­malade.
