True Love - - WHAT'S FOR DINNER -

Serves: 4-6 Prep time: 1 1/2 hrs INGREDIENTS

450 g pork mince

Salt to taste

½ cup bread­crumbs

1 egg

4T oil

1 medium onion, finely chopped 2 gar­lic cloves, crushed

1 tsp gin­ger, crushed 2 T red curry paste

6 cups chicken stock

1 tsp lemon rind

2 tsp lemon juice

2 spring onions, chopped Hand­ful chopped pars­ley 2 cups noo­dles, cooked


1. In a bowl place pork mince and sea­son. Add bread­crumbs and egg and mix to­gether to blend. Shape into small balls. Set aside. 2. Heat oil in a pot and fry balls un­til golden brown and cooked. Set aside in a warm place.

3. In the same pot, fry onions, gar­lic and gin­ger un­til translu­cent. Add curry paste and stir to mix for 2 min­utes. Add stock and cook for 20 min­utes. Re­turn pork, lime juice and rind and spring onion to pot and sim­mer on low for 5 min­utes. 4. Serve soup with noo­dles gar­nished with sesame seeds.
