PORK NOODLE SOUP
Serves: 4-6 Prep time: 1 1/2 hrs INGREDIENTS
450 g pork mince
Salt to taste
½ cup breadcrumbs
1 medium onion, finely chopped 2 garlic cloves, crushed
1 tsp ginger, crushed 2 T red curry paste
6 cups chicken stock
1 tsp lemon rind
2 tsp lemon juice
2 spring onions, chopped Handful chopped parsley 2 cups noodles, cooked
1. In a bowl place pork mince and season. Add breadcrumbs and egg and mix together to blend. Shape into small balls. Set aside. 2. Heat oil in a pot and fry balls until golden brown and cooked. Set aside in a warm place.
3. In the same pot, fry onions, garlic and ginger until translucent. Add curry paste and stir to mix for 2 minutes. Add stock and cook for 20 minutes. Return pork, lime juice and rind and spring onion to pot and simmer on low for 5 minutes. 4. Serve soup with noodles garnished with sesame seeds.
