CO­RIAN­DER BUT­TER­MILK GRILLED VEG­ETA­BLES

Prep Time: 35 min­utes

2 cups but­ter­milk

Salt and freshly ground black pep­per Hand­ful co­rian­der, finely chopped 1 clove gar­lic, knob of gin­ger crushed 1 green chilli, finely chopped

200 g sweet­corn

400 g brown mush­rooms

250 g patty pans

1 red pep­per

2 spring onions

2 rose­mary sprigs

Olive oil

Method

1. Mix the but­ter­milk, salt and freshly ground black pep­per, co­rian­der, gar­lic and gin­ger.

2. Place veg­eta­bles in a large bowl and pour the but­ter­milk mix­ture. Leave to mar­i­nate for 20 min­utes. Re­move and pat the veg­eta­bles dry with pa­per towel.

3. Place veg­eta­bles on an olive oil-greased grid­dle pan over medium coal heat and grill for 15 min­utes. Re­move and serve.
