That’s why I think the new one-litre cock­tail carafes are a good way to spend a Fri­day af­ter­noon be­fore go­ing out for the evening.

The ho­tel bar, which opens out on to a pool area, is host­ing a new cock­tail evening called Fri­days at Fred­die’s, where you can share a carafe with your mates be­tween 4pm and 7pm while lis­ten­ing to live mu­sic.

Food and bev­er­age man­ager­ess Vanessa de Vil­liers makes the ap­ple mo­jito by build­ing it in the carafe.

A key in­gre­di­ent is In­ver­roche Fyn­bos gin – a firm, de­li­cious spirit that gives off a herby aroma.

It ap­pears to be an at­trac­tive shar­ing treat, with bits of ap­ple and mint float­ing about in the carafe.

It is served with salt-rimmed mar­tini glasses to pour into and en­joy.

I do sug­gest pour­ing quickly to avoid the ice melt­ing too quickly. Fred­die’s is open daily from 11am. Aside from Fri­day’s at Fred­dies, there is also a ta­pas spe­cial: a plat­ter for R65 which in­cludes prawns, cala­mari, samoosas and rissoles. – WendylMartin
