ON TUESDAY I’ll continue my culinary adventures, this time to Mexico, where I’ll turn up the heat – and not a moment too soon considering the winter freeze is well and truly upon us.
Mexican food is best described as versatile, fresh, simple and delicious. Chili peppers are a staple in Mexican cooking and there’s an amazing range available – remember not all chilies are created equal in terms of flavour or heat factor, so if you’re not used to cooking with them, make sure you read the recipe carefully so you end up using the right kind. You don’t have to limit chilies to Mexican food; once you get used to them you can start incorporating them into other dishes for a bit of zing.
