Turn up the heat with this coun­try’s clas­sic chilli recipes – mop up with tacos and que­sadil­las just­cook­ing

ON TUES­DAY I’ll con­tinue my culi­nary ad­ven­tures, this time to Mex­ico, where I’ll turn up the heat – and not a mo­ment too soon con­sid­er­ing the win­ter freeze is well and truly upon us.

Mex­i­can food is best de­scribed as ver­sa­tile, fresh, sim­ple and de­li­cious. Chili pep­pers are a sta­ple in Mex­i­can cook­ing and there’s an amaz­ing range avail­able – re­mem­ber not all chilies are cre­ated equal in terms of flavour or heat fac­tor, so if you’re not used to cook­ing with them, make sure you read the recipe care­fully so you end up us­ing the right kind. You don’t have to limit chilies to Mex­i­can food; once you get used to them you can start in­cor­po­rat­ing them into other dishes for a bit of zing.
