I nor­mally go with ba­con, cheese, brin­jal, mush­rooms and toma­toes. Some may say it’s one fill­ing ex­tra, but then again it de­pends how you like your frit­tata. I fry the in­gre­di­ents in shal­low oil, add herbs and it’s ready in less than 8 min­utes. And the cheese? Sprin­kle it on top of the frit­tata, a minute be­fore it’s done.
