SUM­MER- STYLE BAKE

Women's Health (South Africa) - - COMPETITION - SERVES 2 (OR 4 WITH A SIDE, SUCH AS BROWN RICE)

• 1 tbsp ex­tra-vir­gin olive oil • A few whole gar­lic cloves • 2 red onions, chopped • 6 cour­gettes, chopped • 1 large yel­low pep­per, chopped • 1 tin chopped toma­toes • 4 salmon fil­lets (about 150g each) • 2 lemons, sliced • ½ cup white wine • Pinch each: salt, pep­per and chilli flakes • Fresh basil, for gar­nish­ing 1/ Pre­heat the oven to 200°C. Place the oil, gar­lic and veg­eta­bles in a bak­ing tray and bake for 20 min­utes un­til semi-cooked. 2/ Add the salmon, squeeze over the juice from the lemon slices, pour over the wine, add sea­son­ing and bake for 10 min­utes, un­til the fish has cooked through. Gar­nish with basil.
