SERVES 2 • 3 to 4 cour­gettes for spi­ral­is­ing (or buy ready-made), raw or steamed • 2 salmon fil­lets (about 150g each), cooked, flaked • Fresh basil for gar­nish­ing • 1 tbsp ex­tra-vir­gin olive oil • Juice and zest of ½ lemon • Pinch each: salt, pep­per and chilli flakes 1/ Toss all of the in­gre­di­ents to­gether and sea­son to taste. Serve warm or at room tem­per­a­ture.
