CREAMY VEGAN “MELTED CHEESE” SAUCE
1 potato, peeled, chopped 1 large carrot, peeled, chopped 1 tbsp lemon juice ¼ cup nutritional yeast Pinch each salt, onion powder, garlic powder, cayenne pepper
1/ Boil the potato and carrot in a little water in a small saucepan over medium-high heat. Once tender, remove from the heat. 2/ Place all the ingredients into a Nutribullet with some of the vegetable water. Blend until smooth, adding more water if necessary. 3/ Assemble nachos (we like Santa Anna Organic Corn Chips, R39, WellnessWarehouse. com) on a platter with lettuce, tomato salsa and guacamole. Pour the cheese over. Garnish with coriander.
