CREAMY VE­GAN “MELTED CHEESE” SAUCE

1 potato, peeled, chopped 1 large car­rot, peeled, chopped 1 tbsp le­mon juice ¼ cup nu­tri­tional yeast Pinch each salt, onion pow­der, gar­lic pow­der, cayenne pep­per

1/ Boil the potato and car­rot in a lit­tle wa­ter in a small saucepan over medium-high heat. Once ten­der, re­move from the heat. 2/ Place all the in­gre­di­ents into a Nutribul­let with some of the veg­etable wa­ter. Blend un­til smooth, adding more wa­ter if nec­es­sary. 3/ As­sem­ble na­chos (we like Santa Anna Or­ganic Corn Chips, R39, Well­nessWare­house. com) on a plat­ter with let­tuce, tomato salsa and gua­camole. Pour the cheese over. Gar­nish with co­rian­der.
