FISH TACOS WITH FRUIT SALSA

GRAPE­FRUIT + SWEET MELON + WIN­TER MELON + CAB­BAGE =

1 grape­fruit, seg­mented and chopped, juice re­served ⅔ cup diced sweet melon ⅔ cup diced win­ter melon 1 jalapeño, minced 2 tbsp co­rian­der leaves 450g hake, an­gelfish or other flaky white fish 1½ tsp canola oil 8 corn tor­tillas, warmed 1 cup shred­ded red cab­bage Lime wedges, for serv­ing

1/ Mix to­gether grape­fruit, sweet melon, win­ter melon, jalapeño and co­rian­der. Add grape­fruit juice and sea­son with salt to taste. 2/ Brush fish with oil and sea­son with salt and pep­per. Pan-fry or grill over medium-high heat for four min­utes. Flip and cook un­til flesh is opaque, about two min­utes fur­ther. Re­move from heat and flake with fork. 3/ Di­vide fish among the tor­tillas. Top each with two ta­ble­spoons cab­bage and ¼ cup fruit salsa. Serve with lime. SERVES 4
