The key to mak­ing a good dress­ing is to use goodqual­ity oil and cre­ate a bal­ance be­tween acid­ity and sweet­ness. The ba­sic recipe for any good dress­ing starts by whisk­ing to­gether: > 1 tsp mus­tard > 1 tsp honey > 2 tbsp lemon juice > 2 tbsp ex­travir­gin olive oil Then you can add in­gre­di­ents to cre­ate dif­fer­ent flavour com­bos or use them to en­hance flavours in your salad. Try adding: herbs, gar­lic, ginger, lemon­grass, chilli, salt and pep­per. You can also opt to swap out in­gre­di­ents in the base, as long as you re­mem­ber to keep the flavours bal­anced. For ex­am­ple: olive oil can be re­placed with av­o­cado oil or good canola oil. Lemon juice can be swapped with lime juice or vine­gar. Honey can be swapped with agave or co­conut­blos­som nec­tar.
