An­dre Rutishauser worked for marine con­ser­va­tion group Sea Shep­herd be­fore open­ing Con­scious Café in Hill­crest four years ago. He’s pas­sion­ate about the en­vi­ron­men­tal ben­e­fits of a ve­gan or veg­e­tar­ian diet. The café’s most pop­u­lar dish?
