Slice and blanch as­para­gus spears and ar­range on a plat­ter with a slice of sweet melon, goat’s cheese rolled in pink pep­per­corns and fresh rocket. Driz­zle with a squeeze of lime juice and ex­tra vir­gin olive oil. Top with plenty of Parma ham, speck and Ser­rano ham.
