For the pesto: av­o­cado 1, peeled and chopped le­mon ½, zested and juiced gar­lic 2 cloves, chopped basil 20 g co­rian­der 10 g ex­tra vir­gin olive oil 2T pecorino 60 g, grated, plus ex­tra to gar­nish pine nuts 50 g sea salt and freshly ground black pep­per, to taste

1 Cook the pasta ac­cord­ing to pack­age in­struc­tions. 2 To make the pesto, place the av­o­cado in a mor­tar and pes­tle, add the re­main­ing in­gre­di­ents and gently pound un­til smooth. 3 Stir into the pasta and sea­son to taste. Gar­nish with pecorino. FAT-CON­SCIOUS, MEAT-FREE
