SERVES 4-6 Prepa­ra­tion time: 15 min Mar­i­nat­ing time: 1 hour Cook­ing time: 15­20 min Stand­ing time: 10 min

PASTE 3 red pep­pers 2 gar­lic cloves 5 ml (1 t) chilli flakes 60 ml (¼ c) olive oil Mal­don salt to taste hand­ful green or black

olives, chopped hand­ful fresh pars­ley,

chopped MEAT 500-800 g steak, loin

or fil­let oil freshly baked bread

or rolls to serve

1 Paste Sear the pep­pers over the flames un­til black blis­ters form on the skin Cool in a plas­tic bag, then take off the skin Slice into strips 2 Blend ²/₃ of the pep­pers with the gar­lic, chilli and olive oil un­til a smooth paste forms Sea­son with Mal­don salt 3 Rub the steak with some of the paste and mar­i­nate in the fridge for an hour 4 Add olives, pars­ley and the re­main­ing pep­pers to the rest of the paste to make a salsa Set aside 5 Meat Brush the meat with oil and braai over very hot coals Turn and braai un­til done to your lik­ing (see tips on op­po­site page) Baste fre­quently with mari­nade while it cooks Sea­son with salt and let the meat rest for 10 min­utes 6 Slice the steak and serve with the salsa on fresh bread or rolls
