HOW LONG SHOULD MEAT BE MARINATED?
It depends on the kind of meat and the size of the cut. Large cuts can be marinated for at most one or two days. Take care not to marinate meat too long or it becomes floury. Smaller cuts need much less time, eg chops can be marinated for about an hour or more.
Don’t put cooked meat in marinade previously used with uncooked meat – it contains bacteria that can make you ill. Leftover marinade must be cooked if you serve it with the meat.
