It de­pends on the kind of meat and the size of the cut. Large cuts can be mar­i­nated for at most one or two days. Take care not to mar­i­nate meat too long or it be­comes floury. Smaller cuts need much less time, eg chops can be mar­i­nated for about an hour or more.

Don’t put cooked meat in mari­nade pre­vi­ously used with un­cooked meat – it con­tains bac­te­ria that can make you ill. Left­over mari­nade must be cooked if you serve it with the meat.
