10 ml (2 t) oil 15 ml (1 T) but­ter 1 onion, sliced

into rings 4-6 lamb chops black pep­per 10 ml (2 t) steak

and chops spice 60 ml (¼ c) Worces

1 Heat the oil and but­ter in a pan and fry the onion rings un­til soft and brown. Drain on kitchen pa­per and set aside. 2 Place the chops in a glass bowl and sea­son with the pep­per and spice. Pour over the Worces­ter sauce and mari­nade for 15 min­utes. 3 Braai the chops over hot coals un­til just cooked about 15-20 min­utes, turn­ing of­ten. Spoon the onion rings on top and serve with pars­ley baby pota­toes.

S Braai the fatty edges of chops be­fore cook­ing the meaty sides. S Place the cooked onion rings in a black cast-iron pot, ar­range the cooked chops on top and cover. Place near the fire and keep warm un­til cooked. Serve with pot bread to mop up the onions.
