EXTRA COOKING TIPS
Pork, with the exception of fillet, must be cooked until just done and no longer pink. Test this by inserting a skewer into the meat: if the juices run clear the meat is done. Take care not to overcook pork as it becomes dry fairly quickly. Fillet is best when cooked to medium and slightly pink inside.
To braai pork perfectly, coals should be medium or even cool. Move the grill closer to the coals as the cooking time comes to an end.
Chops that are cut too thinly dry out when cooked over the fire. The ideal thickness is 2 cm.
