CURRIED PORK CHOPS
SERVES 6 Preparation time: 20 min Cooking time: 15 min
SAUCE 15 ml (1 T) oil 1 onion, sliced 2 ml (½ t) ground
coriander 15 ml (1 T) mild
powder 2 ml (½ t) ground
cumin 2 ml (½ t) ground
ginger 500 ml (2 c) cream or half milk/ half cream salt and pepper 60 ml (¼ c) chopped fresh coriander 160 ml (₂⁄₃ c) sultanas, soaked in boiling water 2 bananas, sliced MEAT 6 pork neck steaks salt and pepper oil salad and braaied sandwiches (optional) to serve 1 Sauce Heat the oil in a saucepan and fry the onion until glossy. Mix in the spices. 2 Add the cream or milk/cream, season and bring to the boil. Simmer until the sauce is fragrant and has thickened slightly. 3 Stir in the coriander, sultanas and bananas. Set aside. 4 Meat Season the steaks with salt and pepper, rub with oil and braai over moderate-to-hot coals until done, about 15 minutes. Turn often and be careful not to over- cook the meat. 5 Spoon the sauce over the meat and serve with salad and braaied sandwiches (recipe on page 85), if you like.
