BAST­ING SAUCE 125 ml (½ c)

white wine 60 ml (¼ c)

soy sauce 5 ml (1 t) mus­tard

pow­der 375 ml (1½ c)

pineap­ple juice 2 gar­lic cloves,

crushed 30 ml (2 T)

brown sugar CHOPS 8 pork chops, cut

2-3 cm thick 5 ml (1 t) chopped

fresh sage 5 ml (1 t) pa­prika salt and pep­per SPRING ONION RICE 500 ml (2 c) jas­mine rice cooked ac­cord­ing to the packet in­struc­tions 4-6 spring onions,

finely chopped hand­ful sesame

seeds 1 Bast­ing sauce Heat to­gether all the ingredients for 10 min­utes un­til slightly re­duced Al­low to cool 2 Chops Rub the chops with the sage and pa­prika and set aside for about 15 min­utes 3 Sea­son the meat with salt and pep­per, and braai over mod­er­ate-to-hot coals for about 15 min­utes, turn­ing fre­quently and bast­ing with the sauce un­til the meat is just done 4 Spring onion rice Add the chopped spring onions to the rice and sprin­kle sesame seeds over Mix to­gether 4 Heat the re­main­ing sauce un­til it reaches boil­ing point and serve with the chops and spring onion rice

Ap­ple sauce is also de­li­cious with pork re­gard­less of the cut Chop 4 ap­ples finely, add 60 ml (¼ c) sugar and 125 ml (½ c) wa­ter and cook un­til soft Blitz the ap­ple mix­ture, 60 ml (¼ c) but­ter and 30 ml (2 T) Sichuan or black pep­per in a food pro­ces­sor un­til smooth Serve with the pork
