OR­ANGE MARI­NADE grated zest of

1 or­ange 250 ml (1 c) or­ange

juice 30 ml (2 T) or­ange

mar­malade 20 ml (1 t) soy sauce hand­ful chopped

fresh co­rian­der MEAT 1-2 whole pork

fil­lets oil salt and pep­per or­ange slices rooi­bos tea in­fu­sion


1 Or­ange mari­nade Mix to­gether all the ingredients 2 Meat Place the pork in a non-metal bowl and pour the mari­nade over Mar­i­nate for 1 hour Re­move the meat and set aside the mari­nade to use later 3 Brush the meat with oil, sea­son with salt and pep­per and brown over very hot coals Move the grid fur­ther from the heat, cover the meat with alu­minium foil and braai for about 20 min­utes un­til just done and slightly pink in the mid­dle Turn fre­quently while cook­ing Slice thickly and ar­range on a serv­ing plat­ter 4 Braai the or­ange slices quickly and ar­range with the meat Bring the left­over mari­nade to boil and re­duce un­til fra­grant, adding a lit­tle rooi­bos tea, if us­ing Pour over the meat

Pork is a health­ier meat op­tion be­cause, apart from the neck and belly, most of the fat is on the out­side rather than mar­bled through­out and can be cut off
