chopped 1 can (410 g) chick­peas, rinsed and drained 125 ml (½ c)

black olives SALSA DRESS­ING 4 toma­toes,

chopped 2 chill­ies, chopped 2 gar­lic cloves,

crushed 1 red onion, finely

chopped 5 ml (1 t) ground

cumin 2 ml (½ t) ground

co­rian­der 125 ml (½ c) finely chopped fresh co­rian­der lemon juice for

moist­en­ing salt and freshly ground black pep­per

1 Cook the quinoa ac­cord­ing to the packet in­struc­tions Lightly mix to­gether the cooked quinoa, cu­cum­ber, baby corn, chick­peas and olives 2 Salsa dress­ing Mix to­gether the toma­toes, chill­ies, gar­lic, red onion, cumin, ground co­rian­der, fresh co­rian­der and lemon juice, and sea­son with salt and pep­per 3 Com­bine the dress­ing with the salad and serve
