MAKES 1 LOAF Prepa­ra­tion time: 20 min Bak­ing time: 50-55 min

375 ml (1½ c)

milk 375 ml (1½ c)

mealie meal 60 ml (¼ c) but­ter 250 ml (1 c)

cake flour 30 ml (2 T) sugar 15 ml (1 T) bak­ing

pow­der 2 ml (½ t) salt 5 ml (1 t) sage,

finely chopped 250 ml (1 c) cel­ery,

finely chopped 180 ml (¾ c)

car­rots, grated 1 green pep­per,

finely chopped 3 eggs, whisked

Pre­heat the oven to 180 °C and grease a 23 cm x 16 cm pan 1 Bring the milk to the boil and, while stir­ring, pour in the mealie meal Add the but­ter and mix well Leave to cool 2 In a sep­a­rate bowl, sift to­gether the flour, sugar, bak­ing pow­der and salt 3 Add the sage, cel­ery, car­rots and green pep­per to the mealie meal mix­ture Add the eggs and mix un­til well com­bined 4 Stir in the dry ingredients and mix well Pour the mix­ture into the pre­pared pan and bake for 50-55 min­utes un­til done – a testing skewer in­serted in the mid­dle should come out clean
