MAKES 1 SQUARE LOAF Prepa­ra­tion time: 15 min Bak­ing time: 1 hour

100 ml but­ter 60 ml (¼ c) sugar 2 eggs, whisked 125 ml (½ c)

cake flour 375 ml (1½ c)

mealie meal 15 ml (1 T) bak­ing

pow­der 3 ml (¾ t) salt 5 ml (1 t) ground

gin­ger (op­tional) 250 ml (1 c) dessi­cat

ed co­conut 125 ml (½ c)

co­conut milk 1 pineap­ple, sliced

and quar­tered but­ter and honey

to serve

Pre­heat the oven to 180 °C and grease a 19 cm x 19 cm square cake tin 1 Cream the but­ter and sugar Add the eggs and whisk un­til light and fluffy 2 In a sep­a­rate bowl, sift to­gether the dry ingredients and mix in the co­conut 3 Add the dry ingredients to the egg mix­ture, al­ter­nat­ing with the co­conut milk Mix well 4 Spoon into the dish and top with the pineap­ple Bake for 1 hour un­til done 5 Serve with but­ter and honey
