Chicken and pear stew

SERVES 4-6 Prepa­ra­tion time: 10 min Cook­ing time: 45 min

6 chicken pieces

(legs and thighs) salt and freshly ground black pep­per 60 ml (¼ c)

cake flour 15 ml (1 T) oil 2 pears, sliced 1 onion, chopped 1 gar­lic clove,

crushed 250 ml (1 c) chicken

stock 15 ml (1 T) lemon

juice 5 ml (1 t) sugar mashed pota­toes

to serve 1 Sea­son the chicken with salt and pep­per, and roll in the flour to coat. 2 Heat the oil in a skot­tel braai and brown the chicken all over. Re­move and set aside. 3 Fry the pears un­til lightly browned. Re­move and set aside. 4 Fry the onion and gar­lic un­til golden brown. Re­turn the chicken to the skot­tel braai and add the re­main­ing ingredients, ex­cept the pears and mashed pota­toes. 5 Sim­mer for about 35 min­utes un­til the chicken is done. Add the pears and sim­mer for a few more min­utes un­til heated through. 6 Sea­son with salt and pep­per, and serve with mashed pota­toes.

Re­place the pears with ap­ples for a taste vari­a­tion.
