Chicken and pear stew
SERVES 4-6 Preparation time: 10 min Cooking time: 45 min
6 chicken pieces
(legs and thighs) salt and freshly ground black pepper 60 ml (¼ c)
cake flour 15 ml (1 T) oil 2 pears, sliced 1 onion, chopped 1 garlic clove,
crushed 250 ml (1 c) chicken
stock 15 ml (1 T) lemon
juice 5 ml (1 t) sugar mashed potatoes
to serve 1 Season the chicken with salt and pepper, and roll in the flour to coat. 2 Heat the oil in a skottel braai and brown the chicken all over. Remove and set aside. 3 Fry the pears until lightly browned. Remove and set aside. 4 Fry the onion and garlic until golden brown. Return the chicken to the skottel braai and add the remaining ingredients, except the pears and mashed potatoes. 5 Simmer for about 35 minutes until the chicken is done. Add the pears and simmer for a few more minutes until heated through. 6 Season with salt and pepper, and serve with mashed potatoes.
Replace the pears with apples for a taste variation.
