Yo­ghurt and herb chicken

SERVES 4 Prepa­ra­tion time: 10 min Cook­ing time: 25-30 min

4 chicken breast

fil­lets, cubed salt and pep­per 15 ml (1 T) oil 2 gar­lic cloves,

crushed 500 ml (2 c) plain

yo­ghurt 30 ml (2 T) chopped

fresh ore­ganum 15 ml (1 T) chopped

fresh pars­ley grated zest of 2 lemons and 15 ml (1 T) of the juice fresh herbs to

gar­nish potato wedges to

serve 1 Sea­son the chicken with salt and pep­per 2 Heat the oil in a skot­tel braai and fry the chicken in batches un­til lightly browned 3 Add the gar­lic and stir-fry for about a minute 4 Add the yo­ghurt, ore­ganum, pars­ley and lemon zest and sim­mer for about 15-20 min­utes or un­til the chicken is done 5 Stir in the lemon juice and sea­son with salt and pep­per 6 Gar­nish with herbs and serve with potato wedges
