jam 60 ml (¼ c) chopped

fresh pars­ley 15 ml (1 T) chopped

fresh thyme salt and pep­per rocket salad to serve

If us­ing wooden skew­ers, soak in wa­ter to pre­vent them from burn­ing over the fire 1 Thread the chicken, apri­cots and onion wedges al­ter­nately onto the ke­bab skew­ers Ar­range in a mar­i­nat­ing dish 2 Rub Com­bine all the ingredients, rub over the ke­babs and sea­son 3 Braai the ke­babs over mod­er­ate coals for about 15 min­utes un­til done, turn­ing fre­quently 4 Serve with a rocket salad
