Chicken basting sauces

LEMON AND GARLIC SAUCE

3 garlic cloves, crushed 5 ml (1 t) chopped fresh

oregano or thyme 15 ml (1 T) grated lemon

zest 60ml(¼c)lemonjuice salt and pepper

Mix the ingredient­s well and follow the “to spit braai” instructio­ns with the barbecue chicken recipe (left). The spice mix step can be omitted.

ASIAN SAUCE

60 ml (¼ c) soy sauce 30 ml (2 T) mirin or sweet

sherry

45ml(3T)honey

30 ml (2 T) rice vinegar
