Chicken basting sauces
LEMON AND GARLIC SAUCE
3 garlic cloves, crushed 5 ml (1 t) chopped fresh
oregano or thyme 15 ml (1 T) grated lemon
zest 60ml(¼c)lemonjuice salt and pepper
Mix the ingredients well and follow the “to spit braai” instructions with the barbecue chicken recipe (left). The spice mix step can be omitted.
ASIAN SAUCE
60 ml (¼ c) soy sauce 30 ml (2 T) mirin or sweet
sherry
45ml(3T)honey
30 ml (2 T) rice vinegar
