Apple, cranberry and walnut salad
BEETROOT SALAD WITH GOAT’S MILK CHEESE APPLE, CRANBERRY AND WALNUT SALAD

10 baby beetroot
120 g baby spinach
100 g goat’s milk cheese
60 ml (¼ c) pomegranate seeds mixture of olive oil and balsamic vinegar
or lemon juice to dress
1 Boil the beetroot until soft. Peel and halve or slice.
2 Arrange the baby spinach on a salad plate and top with the beetroot.
3 Sprinkle chunks of the cheese over the salad followed by the pomegranate seeds. Drizzle with the dressing.

1 pack (120 g) mixed salad leaves
1 red apple, cubed or sliced
1 Granny Smith apple, cubed or sliced 2 rounds feta cheese, coarsely crumbled 125 ml (½ c) dried cranberries
100 g walnuts, coarsely chopped DRESSING mixture of olive oil and balsamic vinegar
or lemon juice
1 Salad Lightly mix all the ingredients in a salad bowl.
2 Dressing Drizzle over the salad.
