10 baby beet­root

120 g baby spinach

100 g goat’s milk cheese

60 ml (¼ c) pomegranate seeds mix­ture of olive oil and bal­samic vine­gar

or lemon juice to dress

1 Boil the beet­root un­til soft. Peel and halve or slice.

2 Ar­range the baby spinach on a salad plate and top with the beet­root.

3 Sprin­kle chunks of the cheese over the salad fol­lowed by the pomegranate seeds. Driz­zle with the dress­ing.

1 pack (120 g) mixed salad leaves

1 red apple, cubed or sliced

1 Granny Smith apple, cubed or sliced 2 rounds feta cheese, coarsely crum­bled 125 ml (½ c) dried cran­ber­ries

100 g wal­nuts, coarsely chopped DRESS­ING mix­ture of olive oil and bal­samic vine­gar

or lemon juice

1 Salad Lightly mix all the in­gre­di­ents in a salad bowl.

2 Dress­ing Driz­zle over the salad.
