Asian baked brinjal(s)
1-2 brinjals, halved oil
15 ml (1 T) miso paste 15 ml (1 T) honey
5 ml (1 t) sesame oil 10 ml (2 t) rice vinegar 80 ml (¹⁄₃ c) water
TO SERVE toasted sesame seeds 1 spring onion, chopped
or cut into strips
1 Score the fleshy side of the brinjal(s) in a deep diamond
SERVES 2-4 Preparation 10 min Cooking 30-35 min
pattern but don’t cut all the way through. Rub the flesh with oil. Wrap in foil and cook among moderate coals for about 20 minutes or until soft.
2 Spread Mix all the ingredients and spread liberally over the fleshy side of the brinjal(s).
3 Remove the foil and braai over moderate coals for 10-15 minutes or until slightly caramelised. Coat often with the spread.
4 To serve Sprinkle the sesame seeds and spring onion over and serve.
