Asian baked brin­jal(s)

1-2 brin­jals, halved oil


15 ml (1 T) miso paste 15 ml (1 T) honey

5 ml (1 t) sesame oil 10 ml (2 t) rice vine­gar 80 ml (¹⁄₃ c) wa­ter

TO SERVE toasted sesame seeds 1 spring onion, chopped

or cut into strips

1 Score the fleshy side of the brin­jal(s) in a deep di­a­mond

SERVES 2-4 Prepa­ra­tion 10 min Cook­ing 30-35 min

pat­tern but don’t cut all the way through. Rub the flesh with oil. Wrap in foil and cook among mod­er­ate coals for about 20 min­utes or un­til soft.

2 Spread Mix all the in­gre­di­ents and spread lib­er­ally over the fleshy side of the brin­jal(s).

3 Re­move the foil and braai over mod­er­ate coals for 10-15 min­utes or un­til slightly caramelised. Coat of­ten with the spread.

4 To serve Sprin­kle the sesame seeds and spring onion over and serve.
