1 Stretch out the wings and thread onto ke­bab skew­ers.

2 Make lol­lipops: cut off the wing tip and use a knife to push the flesh of the mid­dle bone over the stur­di­est bone to form the ball of the lol­lipop (see pic­ture 4).

3 Cut the wings through the joints to make smaller pieces and fry the pieces in a cast-iron pot. Re­mem­ber to keep nap­kins and lemon wa­ter at hand when serv­ing.
