GREEN COUSCOUS SALAD
150 g couscous
160 ml (²⁄₃ c) boiling water or vegetable stock
15 ml (1 T) olive oil 1 onion, chopped 2 ml (½ t) ground
20 g fresh parsley 20 g fresh coriander 30 ml (2 T) chopped
fresh dill 30 ml (2 T) chopped
90 ml (6 T) olive oil SALAD
50 g unsalted pistachio nuts, toasted and coarsely chopped 3 spring onions,
finely chopped 1 green chilli,
30 g rocket leaves salt and pepper 1 Couscous Put the couscous in a bowl, add the boiling water or stock and cover with clingfilm.
2 Fried onion Heat the oil and fry the onion until golden brown. Stir in the cumin.
3 Herb pesto Pulse all the ingredients in a food processor until smooth.
4 Salad Fluff up the couscous with a fork and mix in the herb pesto. Mix the rest of the salad ingredients with the couscous and season with salt and pepper.
5 Sprinkle the fried onions over the salad and serve.
