150 g cous­cous

160 ml (²⁄₃ c) boil­ing wa­ter or veg­etable stock


15 ml (1 T) olive oil 1 onion, chopped 2 ml (½ t) ground



20 g fresh pars­ley 20 g fresh co­rian­der 30 ml (2 T) chopped

fresh dill 30 ml (2 T) chopped

fresh mint

90 ml (6 T) olive oil SALAD

50 g un­salted pis­ta­chio nuts, toasted and coarsely chopped 3 spring onions,

finely chopped 1 green chilli,


30 g rocket leaves salt and pep­per 1 Cous­cous Put the cous­cous in a bowl, add the boil­ing wa­ter or stock and cover with cling­film.

2 Fried onion Heat the oil and fry the onion un­til golden brown. Stir in the cumin.

3 Herb pesto Pulse all the in­gre­di­ents in a food pro­ces­sor un­til smooth.

4 Salad Fluff up the cous­cous with a fork and mix in the herb pesto. Mix the rest of the salad in­gre­di­ents with the cous­cous and sea­son with salt and pep­per.

5 Sprin­kle the fried onions over the salad and serve.
