Honey ro­tis­serie chicken

Roasted chicken was her late mom’s favourite fam­ily food, Reshika Singh says. “She taught me how to make it.”

SERVES 4

1 whole chicken

6 gar­lic cloves, crushed

5 ml (1 t) grated fresh gin­ger 15 ml (1 T) freshly ground

black pep­per

5 ml (1 t) ground cloves

15 ml (1 T) ground co­rian­der 5 ml (1 t) ground cumin 60 ml (¼ c) honey chopped fresh co­rian­der

to gar­nish

1 Truss the chicken wings with butcher’s twine then truss the drum­sticks to­gether.

2 Com­bine the rest of the in­gre­di­ents well (ex­cept the fresh co­rian­der) and rub over the en­tire chicken.

3 Put the chicken in a ro­tis­serie grid and braai for about 45 min­utes over mod­er­ate coals un­til done. Carve into por­tions and sprin­kle the co­rian­der over.
