Masala wheat salad

500 ml (2 c) wheat or

bar­ley

1 green pep­per, diced 1 red pep­per, diced 4 spring onions,

chopped

2 cel­ery sticks, chopped 50 g wal­nuts, chopped hand­ful of fresh

co­rian­der DRESS­ING

250 ml (1 c) plain

yo­ghurt

45 ml (3 T) cas­tor sugar 10 ml (2 t) le­mon juice 15 ml (1 T) roasted

masala

10 ml (2 t) ground cumin salt and freshly ground

black pep­per

1 Cook the wheat or bar­ley ac­cord­ing to the packet in­struc­tions. Rinse and drain.

2 Add the pep­pers, spring onions, cel­ery and wal­nuts to the wheat or bar­ley. Mix and set aside.

3 Dress­ing Whisk to­gether the yo­ghurt, sugar, le­mon juice, masala and cumin and sea­son with salt and pep­per.

4 Mix the dress­ing with the salad, sprin­kle co­rian­der on top and serve.
