Baby potato salad
BABY POTATO SALAD
1 kg baby potatoes 1 onion, sliced 2 hard-boiled eggs,
4 spring onions, chopped
1 wheel (100 g) feta cheese, crumbled (optional) half avocado, diced salt and pepper DRESSING
250 ml (1 c) mayonnaise
45 ml (3 T) sweet
15 ml (1 T) soy sauce
1 Cook the potatoes until just done. Drain, allow to cool and halve some of the potatoes.
2 Lightly mix together the remaining ingredients.
3 Dressing Mix together all the ingredients and pour over the salad. Mix lightly and season with salt and pepper, if necessary.

Cook the potatoes and crush slightly. Sprinkle grated lemon zest, sea salt and olive oil over and mix. Arrangerocket on top.
