Cous­cous salad

125 ml (½ c) cous­cous 3 spring onions,

chopped hand­ful of fresh mint,

finely chopped hand­ful of fresh pars­ley, finely chopped 100 g cherry to­ma­toes,

sliced DRESS­ING

1 gar­lic clove, crushed 45 ml (3 T) olive oil zest of 1 le­mon and

30 ml (2 T) of juice salt and freshly ground

black pep­per

1 Pre­pare the cous­cous ac­cord­ing to the packet in­struc­tions. Fluff with a fork.

2 Add the spring onions, mint, pars­ley and to­ma­toes and mix.

3 Dress­ing Com­bine all the in­gre­di­ents and mix well with the cous­cous. Sea­son with more salt and pep­per, if nec­es­sary.
