“I’m always testing new ideas and tried making pizzas in a kettle braai. One gets a similar woodfired taste as when using a wood-fired oven,” says Esther Malan.
3 large readymade pizza bases (basic bread dough)
1 Cover each base with toppings of your choice – seafood, meat or vegetarian (see right).
2 Arrange each base and topping on a kettle braai or on a grid over moderate coals. Close the lid or cover with aluminium foil and braai for about 10-12 minutes until the bases are crisp and the cheese melted. Serve immediately.
