MUS­TARD CRUMBED PORK CHOPS

SERVES 4 Prepa­ra­tion time: 10 min Cook­ing time: 15- 20 min

4 pork loin chops salt and freshly ground pep­per 10 ml ( 2 t) Di­jon mus­tard 15 ml ( 1 T) honey 15 ml ( 1 T) olive oil

CRUMB COAT­ING

4 slices white bread 15 ml ( 1 T) whole­grain mus­tard 10 g fresh pars­ley 1 gar­lic clove, crushed

PEAS

500 ml ( 2 c) peas 30 ml ( 2 T) but­ter

Pre­heat the oven to 200 ° C Put a wire rack on a bak­ing sheet and grease with non­stick spray 1 Sea­son the pork chops with salt and pep­per Mix the mus­tard and honey and brush the chops with the mix­ture 2 Crumb coat­ing Blitz the ingredients in a food pro­ces­sor Coat the pork chops on one side with the mix­ture, press­ing it down firmly 3 Ar­range the chops on the wire rack, driz­zle with the olive oil and cook in the pre­heated oven for 15- 20 min­utes or un­til done 4 Peas Blanch the peas in boil­ing wa­ter, stir in the but­ter and sea­son with salt and pep­per Serve with the chops, fresh water­cress and roast gar­lic, if pre­ferred
