500 g beef mince 2 slices white or brown bread ( crusts re­moved), soaked in milk 1 onion, grated 1 gar­lic clove, crushed 10 g fresh co­rian­der, finely chopped 30 ml ( 2 T) mince spice mix salt and freshly ground pep­per 30 ml ( 2 T) oil


250 ml ( 1 c) wholek­er­nel sweet­corn ½ red onion, chopped 10 g fresh co­rian­der, chopped


4 bread rolls ½ red onion, sliced into rings 4 jalapeño chill­ies, sliced length­ways 4 large slices Ched­dar cheese 60 ml ( ¼ c) sour cream 1 Pat­ties Mix all the ingredients ex­cept the oil Shape into pat­ties and chill for at least 15 min­utes 2 Heat the oil in a pan and fry the pat­ties un­til golden brown and done 3 Sweet­corn salad Mix the ingredients 4 Burg­ers Halve the rolls and put a patty, a few onion rings, a jalapeño pep­per, a slice of cheese, a spoon­ful of the sweet­corn salad and a dol­lop of sour cream on one half of the roll 5 Cover with the other half and se­cure with a ke­bab skewer 6 Serve the burg­ers with gua­camole, tomato salad and na­chos, if pre­ferred
