FRIED PORK STEAKS WITH AP­PLE CHUT­NEY AND MASHED POTA­TOES

SPICE RUB

15 ml ( 1 T) pa­prika 15 ml ( 1 T) brown sugar 5 ml ( 1 t) mus­tard pow­der 5 ml ( 1 t) chilli pow­der 15 ml ( 1 T) onion pow­der 5 ml ( 1 t) ground cumin 5 ml ( 1 t) ground co­rian­der

STEAKS

4 pork steaks salt and pep­per 15 ml ( 1 T) oil

CHUT­NEY

15 ml ( 1 T) but­ter 3 onions, sliced 60 ml ( ¼ c) brown sugar 15 ml ( 1 T) rice vine­gar 2 Granny Smith ap­ples, chopped salt pinch of ground cumin

MASHED POTA­TOES

6 pota­toes, peeled and cooked 15 ml ( 1 T) but­ter 15 ml ( 1 T) milk Pre­heat the oven to 230 ° C 1 Spice rub Mix the ingredients 2 Steak Sea­son the meat with salt and pep­per and rub in the spice mix­ture Driz­zle with the oil and ar­range on a bak­ing sheet Roast for 15 min­utes or un­til done to your lik­ing 3 Chut­ney Heat the but­ter and slowly fry the onions un­til golden brown Add the brown sugar and rice vine­gar and stir­fry un­til the sugar has dis­solved 4 Add the chopped ap­ples and fry rapidly so the ap­ples are heated through but still firm Sea­son with salt and the cumin 5 Mashed pota­toes Mash the pota­toes with the but­ter and milk and sea­son with salt 6 Serve the pork steaks with the mash and ap­ple chut­ney

Spice up the chut­ney by adding a hand­ful of sul­tanas, a cas­sia stick, a star anise and a few cloves while fry­ing the onions
